Read What’s Cookin? Dirty Rice al fresco to see what I did with the Spinach & Feta Chicken Sausage, and Hot Italian Chicken Sausage. Wow, were they great tasting. As I mention in the recipe, their individual flavors stood out, even when belnded with jalapeno peppers, onions, rice and shrimp.
I loved the Spicy Jalapeno Chicken Sausage, I used it for Sausage & Pepper sandwiches. It was mild and spicy at the same time, which was kind of strange.

If I loved the 3 sausages above, how could I only say that I loved the Teriyaki Ginger Chicken Meatballs. I’d have to say worship, not love. What makes them so great? First, like the Spinach & Feta Sausage, these are fully cooked. So convenient! Second, the chunks of ginger and pineapple. Third, all the other ingredients stuffed into those litlle balls of happiness. I prepared them as an appetizer the first time I tried them. OK, I didn’t actually “prepare” them, I microwaved them for 90 seconds in a dish with a few ounces of water. I’ve attempted different recpes since then, but I just keep getting stuck with the microwave.
