I know how to make rice. And I know how to make Cuban style black beans. I don’t know how to cook them together and prepare Congri. Alina does though, and it’s one of her specialities. When she prepares the dish, she makes a lot of it, enough to last us a couple of Months. Just one problem. What do we do with all of it?

Freezing Congri is very easy, and it thaws out easy too. Choose either a freezer bag, or air tight plastic container. Divide into individual servings, and place the Congri in the bag/container. Leave a little room for expansion of the Congri when it freezes. Label with the date and name, and keep frozen for up to 6 months. To thaw, place the frozen Congri in the refrigerator for 24 hours, then heat up either on the stove or in the microwave. If desired, add a teaspoon of olive oil to the Congri before heating.
