What’s Cookin? Fresh Fare Friday June 8: Indian Chole (Chickpea Curry)

What is Fresh Fare Friday? By the end of the week, I’m usually craving something light, a little on the healthier side, and easy to prepare. I’ll try to pick out my favorite recipes, featuring fewer ingredients, fresh from the market. Not strictly vegetarian, but leaning that way.

1 tablespoon grated fresh ginger
2 medium onions chopped
1 1/2 teaspoons cumin seeds
2 tablespoons chopped garlic
1/2 inch cinnamon stick
1 bay leaf
1 teaspoon ground coriander
2 medium tomatoes chopped
1/2 teaspoon turmeric
2 (15 ounce) cans garbanzo beans rinsed and drained
1/4-1/2 teaspoon cayenne pepper
1 tablespoon fresh lemon juice
1/2-1 teaspoon garam masala


In a large saucepan over medium heat, heat the cumin seeds, bay leaf and cinnamon until they become very fragrant, swirling around to prevent burning. Add garlic and ginger, cooking them until the smell of those fills the air, then add the onions. Saute the onions, stirring frequently, and adding drops of water to prevent sticking, until they are translucent. Add the tomatoes, coriander, salt, turmeric and cayenne. Check for seasoning, adding if necessary. Bring it to a boil. Add garbanzo beans (chickpeas), put a cover and reduce the heat. Simmer on low heat for 10-15 minutes. Stir in garam masala and lemon juice just before serving. Garnish with a sprinkle of chopped cilantro if you wish. Serve with rice, indian breads or pitas (breads are best warmed on a hot griddle).
