Have I mentioned that I love my crock pot? I should give her a name, but I wouldn’t want to upset Nancy, my GPS. I figured since I use my crock pot a lot, that I would post my favorite recipes for Manic Monday- Let’s Go Make Some Noise. I mean Soup.

Ingredients:
¾ lbs. asparagus: remove the thick ends and cut into 1-inch pieces
1 ½ cups chicken broth
2 tablespoons plain low-fat yogurt
¼ teaspoon salt
pinch black pepper
pinch cayenne pepper
Preparation:
Bring a large pot of water to a boil. Add asparagus and cook until tender, 3 to 5 minutes. Remove and drain. Reserve 2 cups cooking liquid.
Transfer cooking liquid and asparagus (keep a few for decoration) to a food processor and puree until smooth.
Combine asparagus puree with chicken broth in a medium stockpot and heat over medium until warm. Stir in yogurt, salt, pepper, and cayenne.
Decorate with leftover cooked asparagus, serve and enjoy.
