Saturday just seems like a great day for a sandwich. And I don’t mean a few slices of meat between 2 slices of bread wrapped in foil and thrown in a paper bag kind of sandwich. I mean a SANDWICH sandwich!

2 slices whole-wheat bread
2 tablespoons creamy peanut butter
1 small ripe banana, mashed
1 teaspoon powdered sugar
Heat a large nonstick skillet over medium heat for about 3 minutes.
Meanwhile, spread peanut butter on one slice of bread. Top with mashed banana and with the second slice of bread.
Spray heated skillet with nonstick spray. Place sandwich in skillet. Place a heavy pot on sandwich. Grill 3-4 minutes, until browned. Remove sandwich from skillet, spray skillet again with nonstick spray, and return sandwich to skillet to brown on other side, 2-3 more minutes.
Dust with powdered sugar and serve.
