What’s Cookin? Manic Monday- Lets Go Make Some Soup 9/3: Two Tomato Soup

Have I mentioned that I love my crock pot? I should give her a name, but I wouldn’t want to upset Nancy, my GPS. I figured since I use my crock pot a lot, that I would post my favorite recipes for Manic Monday- Let’s Go Make Some Noise. I mean Soup.

Oh, and enjoy!


  • 4 cups reduced sodium, fat-free chicken broth
  • 4 cups chopped ripe or canned tomatoes
  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 2 teaspoons minced roasted garlic
  • 1 large Idaho potato, peeled, cubed
  • 1/2 cup sun-dried tomatoes (not in oil), room temperature
  • 1/2 teaspoon dried basil leaves
  • 1/2 cup milk
  • 2–3 teaspoons sugar
  • Salt and pepper, to taste


Combine all ingredients, except milk, sugar, salt, and pepper, in slow cooker.

Cover and cook on HIGH 4 to 5 hours.

Process soup, milk, and sugar in food processor or blender (or use a hand-held blender directly in the pot) until smooth; season to taste with sugar, salt, and pepper.
