What’s Cookin? Manic Monday- Lets Go Make Some Soup: Cauliflower & Cheese Soup

Have I mentioned that I love my crock pot? I should give her a name, but I wouldn’t want to upset Nancy, my GPS. I figured since I use my crock pot a lot, that I would post my favorite recipes for Manic Monday- Let’s Go Make Some Noise. I mean Soup. I found this recipe on SouthernFood.

Ingredients:

  • 1 med. head of cauliflower, separated    into flowerettes
  • 1 med. onion, chopped
  • 1 carrot, chopped
  • 1 rib celery, chopped, or about 1/4 to 1/2 cup
  • 4 cups chicken stock
  • 1/2 tsp. Worcestershire sauce
  • 1 cup Cheddar cheese, grated
  • salt and pepper
  • 2 cups half-and-half or light cream
  • chopped chives

Preparation:

Combine cauliflower, onion, carrot, celery, and chicken stock in slow cooker.  Cover and cook on low for 6 to 8 hours.  Puree in blender to desired consistency.  Return to slow.  Blend in cream, Worcestershire, and cheese.  Add salt and pepper to taste.  Stir to mix well.  Turn control to high and heat through; garnish servings with chopped chives, if desired. Serves 4 to 6.

Have I mentioned that I love my crock pot? I should give her a name, but I wouldn’t want to upset Nancy, my GPS. I figured since I use my crock pot a lot, that I would post my favorite recipes for Manic Monday- Let’s Go Make Some Noise. I mean Soup. I found this recipe on AYearOfSlowCooking.

Ingredients:

  • 1 yellow onion, diced
  • 2 green onions, chopped
  • 2 red bell peppers, chopped
  • 4 cloves minced garlic
  • 1 28 oz can of crushed tomatoes, with liquid
  • 8 cups vegetable broth
  • 1/4 t black pepper
  • 1/4 – 1/2 t chili powder
  • 1/2 cup uncooked brown rice
  • 1 cup peanut butter (to add later)
  • dollop of sour cream and a bit of tabasco sauce (optional)

Preparation:

  • wash and chop all of the vegetables, and put into the crock.
  • Add the entire can of tomatoes, the uncooked rice, and the spices.
  • pour in the vegetable broth.
  • cover and cook on low for 6-8 hours, or on high for about 4. The soup is done when the onions are fully cooked and are translucent.
  • stir in peanut butter, and cook on high for 20-30 minutes, or until fully heated through.
  • add a dollop of sour cream and a touch of tobasco sauce

Have I mentioned that I love my crock pot? I should give her a name, but I wouldn’t want to upset Nancy, my GPS. I figured since I use my crock pot a lot, that I would post my favorite recipes for Manic Monday- Let’s Go Make Some Noise. I mean Soup. I found this recipe on SouthernFood.

Ingredients:

  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 3 tablespoons olive oil
  • 4 cups Swiss chard, spinach,  or escarole, chopped
  • 2 cups lentils
  • 2 lamb shanks
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon fresh ground black pepper
  • 7 cups beef broth
  • 1/4 cup fresh lemon juice

Preparation:

Saute onion and garlic in oil until tender.  Combine in the slow cooker with greens lentils, lamb shanks, salt, pepper, and broth. Cover and cook on LOW for 8 to 10 hours.  Add lemon juice, adjust  seasonings, and serve.  Shanks may be served on the side or meat may be removed from bones, diced and returned to soup.

Ingredients:

  • 2 pounds boneless lamb cubed, browned, and drained
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 cups water
  • 1 small bay leaf
  • 2 medium carrots, peeled and cut in 1/2-inch slices
  • 2 small onions, thinly sliced
  • 4 medium potatoes, peeled and quartered
  • 1/4 cup quick-cooking tapioca (optional – see Note)

Preparation:

Sprinkle browned lamb cubes with salt and pepper. Place lamb in the crockpot along with water, bay leaf, carrots, onions, potatoes, and tapioca. Cover and cook on low for 10 to 12 hours, adding peas to the stew during the last hour. Note: If you do not wish a thickened gravy, omit the tapioca.

Ingredients:

  • 1 lb. frozen meatballs
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 Tbsp. olive oil
  • 1/2 cup wild rice
  • 3 cups water
  • 2 cups beef broth
  • 2 Tbsp. sugar
  • 1/3 cup apple cider vinegar
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 8 oz. can pineapple tidbits, undrained
  • 2 Tbsp. cornstarch
  • 1/4 cup low sodium soy sauce

Preparation:

In 4-5 quart crockpot, combine all ingredients except cornstarch and soy sauce and stir gently.  Cover and cook on low for 7-8 hours until wild rice is tender.

In small bowl, combine cornstarch and soy sauce, mix well. Stir into soup and cook, covered, on high for 20-30 minutes until soup thickens. Serves 6-8





What’s Cookin? Smoked Turkey & Sausage 15 Bean Crockpot Soup

I ♥ 15 bean soup. Who knew there were that many types of beans? And who counted to make sure there were 15 different beans in the package?

You could use ham hocks and pork sausage for this recipe, but I chose to use smoked turkey necks and smoked turkey sausage.

Ingredients:

  • 15 bean soup mix, soaked overnight and rinsed
  • 6 cups beef broth
  • 2 cups water
  • 1/2 pound smoked turkey neck or ham hock
  • 3 large bay leaf
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 large onion, chopped
  • 2 teaspoons thyme
  • 2 lbs turkey sausage, cut into coins
  • 2 dash hot sauce

Preparation:

  • Place ingredients in a large slow cooker, excluding sausage & hot sauce.
  • Cook for 7 hours on low
  • Remove turkey neck or ham hock and shred meat.
  • Add meat back to the soup.
  • Add sausage
  • Cook for 1-2 more hours on low, until soup is creamy
  • Stir in hot sauce to taste
  • If thicker soup is desired:
  • remove 2 cups of cooked beans
  • process in a blender until smooth
  • place back into crockpot
  • stir to mix.

Ingredients:

  • 1 lb. boneless beef chuck (in 1-inch cubes)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 tsp. olive oil
  • 3 C. sweet potatoes, peeled and cubed (1-inch cubes)
  • 2 tsp. finely chopped garlic
  • 2 whole cloves
  • 1 dried bay leaf
  • 1 cinnamon stick
  • 1 lg. Vidalia/sweet onion, cut into eighths
  • 1 28-oz. can Italian diced tomatoes, undrained
  • 8-10 dried apricots, halved

Preparation:

Heat oil in 10-inch skillet on medium high heat. Sprinkle beef with the salt and pepper and then brown in oil for approximately 5 minutes, stirring occasionally. Combine all ingredients (including beef) into crockpot. Cook on low for 8 hours. Discard cinnamon stick, cloves and bat leaf when done. Serve plain or over rice.

Now on to the recipe. Like a lot of dishes prepared slowly in the crockpot, you might want to arrange to be out of the house while it cooks. You know, because it smells so good that you’ll be tempted to left the lid to get a look. Resist the temptation!

Ingredients:

  • 1 (2 pound) boneless pork loin
  • 1 teaspoon ground sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic, crushed
  • 1/2 cup water

Glaze

  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup balsamic vinegar
  • 1/2 cup water
  • 2 tablespoons soy sauce

Preparation:

  • Combine sage, salt, pepper and garlic.
  • Rub over roast.
  • Place in slow cooker with 1/2 cup water.
  • Cook on low for 6-8 hours.
  • About 1 hour before roast is done, combine ingredients for glaze in small sauce pan.
  • Heat and stir until mixture thickens.
  • Brush roast with glaze 2 or 3 times during the last hour of cooking.
  • Serve with remaining glaze on the side.

Ingredients:

  • 1/2 cup chopped onions
  • 1/4 cup butter
  • 2 tablespoons flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups water
  • 1/2 lb fresh mushrooms, sliced
  • 1 cup chopped celery
  • 2 cups diced potatoes
  • 1/2 cup chopped carrots
  • 1 cup light cream
  • 1/4 cup grated parmesan cheese

Preparation:

Saute onion in butter; add flour and seasonings. Slowly add water, stirring. Bring to a boil, cook 1 minute. Add remaining ingredients, reduce heat and simmer for 30 minutes. Add cream and cheese; heat through.
